FairUse Wizard 2.8 is an outstanding application for converting DVDs to AVI files. This recently updated release features the ability to convert multiple shows or segments from a DVD at one time. The free "Light" Edition has all the functionality I need and a "pay" version of the application ($29.99) allows you to create files bigger than 700 MB and has setting to convert to Ipod, Xbox 360, and more.
